Ingredients

  • 1 cup shredded carrots
  • 1 cup oats
  • ½ cup whole wheat flour
  • ¼ cup molasses
  • 2 tbsp unsweetened applesauce (avoid options with cinnamon)
  • 1 tbsp vegetable oil

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix shredded carrots, oats, and flour.
  3. Add molasses, applesauce, and oil.
    Stir until you get a thick, sticky dough.
  4. Scoop small spoonfuls and roll into bite-sized balls or press into little coins.
  5. Place on a lined baking sheet and bake for 18–22 minutes, until firm but slightly soft in the center.
